BROKEN GLASS SALAD


BROKEN GLASS SALAD- A Larson Christmas tradition from the past
   ( a favorite during Jan’s college days)
 
Ingredients:
3 oz. Red Jello
3 oz Green Jello
wafer cookies or 2 pkg. Graham crackers
1/2 cup butter
1 pint whipping cream
1 envelope Knox Unflavored gelatin
1 can crushed pineapple

Mix each of the different jellos with 1 1/2 cup water and set 
separately in 4"x8" loaf pans.  Let set overnight or until well set.
Cut into 1/2" squares.  Butter an angel food pan or square cake pan

Crust :  crush wafer cookies or 2 pkg. Graham crackers. 
 Add 1/2 cup melted butter, 1/4 cup sugar and pinch of cinnamon.  
 Spread crust in pan.

Whip 1 pint whipping cream firm, add 1/2 cup sugar.
Dissolve 1 pkg. Knox unflavored gelatin in 1/4 cup hot water, add 1/4 cup pineapple juice..add to whipped cream.

Add 2/3 cup chopped walnuts and 1 can crushed, drained pineapple.
Gently fold in jello squares- pour over crust in pan. Chill until served
