CARROT CAKE


  Sam's favorite Birthday cake    A recipe nfrom my sister, Marilyn Jones


1 cup Vegetable oil, 2 cups sugar  4 eggs, 2 cups grated carrots
1 19 oz. can crushed pineapple, 2 1/2 cups flour
1/2 to 1 cup chopped nuts, 1 tsp. Soda
1/2 tsp. Salt, 1 tsp cinnamon, 1 tsp vanilla
  *I use pineapple juice for part of oil

Mix dry ingred together in one bowl- in separate bowl best eggs, sugar,vanilla and oil then add dry ingred and beat together adding pineapple and stir in carrots and nuts

Bake 350 for 40-45 min

may use tube pan 350 for 1 hr.

Frosting: 1/2 -1 box powdered sugar
1/2 to 1 stick margarine
3 or 4 oz cream cheese 
Add one or two Tbs. of milk as needed
