Strawberry Cheese Cake

Strawberry Cheese Cake  -   Lana Esplin


20 soda crackers (rolled fine)            1 tsp. white vinegar
3 eggs whites                                    1 ½ tsp. vanilla
1 C sugar                                           1 tsp. baking powder
½ C chopped nuts 
                          
Beat 3 egg whites until peaks, carefully fold in sugar.  Then fold in vinegar, baking powder, and vanilla.  Then fold in cracker crumbs and nuts.  Spread in greased 9 x 13 pan.  Bake at 350 degrees 10 to 12 min. until lightly browned.  Cool

Beat softened 8 oz package (light) cream cheese until smooth.  Fold in 8 oz carton (light) whipped topping.  Spread this on cooled baked layer.  Cool for one hour.  Then spread one envelope  prepared strawberry glaze and one pint sliced fresh strawberries over layers.  Cool in refrigerator one or two hours to set up.

This recipe is our favorite dessert and is also delicious made with cherry pie filling or blueberry filling.
