Cowboy Cookies

A Classic Chocolate Chip Cookie beefed up with oats, pecans, coconut and craisins if desired      yield: about 3 dozen medium cookies

1 cup shredded coconut
3/4 cup chopped pecans
Place coconut and pecans on a baking sheet. Bake at 350 for 6-8 minutes or until toasted,stir every 2 minutes- set aside to cool

1 cup packed brown sugar
1/2 cup sugar
1 cube butter softened   1/2 cup coconut oil    ( may use just 2 cubes butter)
2 large eggs- room temperature

2 cups flour
1 tsp. baking soda
1/2 tsp salt
1- 1/2 tsp. vanilla
2 cups oats
1 1/2 - 2 cups chocolate chips 


In large bowl, cream butter and sugars until light and fluffy.  Add eggs and vanilla; beat well.  Combine flour, baking soda and salt together in bowl and add to creamed mixure; beat well.  Stir in oats, chips, pecans and (optional 3/4 cup craisins)
        Chill dough for 1 hour or more if possible
Drop by large teaspoons (or cookie scoop) onto ungreased baking sheet.
Bake 10-12 minutes and let set up on baking sheet for a few minutes then transfer to wire racks to cool.
