I ate more than my share of these at a ward activity! Everyone loved them!
Bacon- Wrapped Cream Cheese Stuffed Jalapeno Peppers
Ingredients:
1 package (16 oz) thick-sliced bacon
8-10 medium jalapenos 1 package
(8 oz) cream cheese softened
1/2 C Craisins
Preheat oven to 350 Line baking sheet with aluminum foil with wire cooling rack.
Bake bacon on rack for about 8-10 minutes- will be partially cooked
Meanwhile slice jalapenos in half lengthwise & carefully remove seeds and white flesh.
(**wear gloves during this process.) Mix cream cheese and Craisins in med. bowl.
Fill jalapeno halves with the cream cheese mix to top of the jalapeno half.
Wrap filled peppers with the partially-cooked bacon. Using whole slice or half.
Recommend a whole slice. Tuck bacon into itself or jalapeno to keep tightly wrapped.
Place wrapped jalapenos back onto the wire cooling rack in your foil-lined baking pan.
Return to oven and bake for 20-25 minutes or until the bacon is fully cooked.
*Gloves recommended when removing seeds from peppers
