POTATO BROCCOLI SOUP


POTATO BROCCOLI SOUP
          a long time favorite

1/2 c. margarine
1 c. chopped celery
1 c. chopped onion

Saute above in a pan  
Add 28-29 oz. Chicken broth
( I use chicken bouillon cubes in water)
Peal and Dice 6-8 potatoes, stir into celery mixture
Simmer 15-20 minutes
Optional (Add celery tops and 1 Tbs. Parsley)
Add 10 oz. Frozen chopped broccoli during cooking Add 1 qt.  Milk.    
Mix some milk with 4 Tb. Corn starch and stir to thicken.
Add salt, pepper, and grated cheese before serving
