CHICKEN CHILI


CHICKEN CHILI                                             Sherry Hansen
*I love this recipe- it took 1st Place at our Ward Chili Cookoff

1/2 to 1  red or yellow onion,chopped
1/2 to 1 green or yellow sweet pepper, chopped
sauté together and  add: 

2 large cans of original Bushes Beans (28 oz)
1 can Black Beans- rinsed & drained
2  cans Great Northern Beans- rinsed and drained
(use whatever beans on hand-kidney beans are good too)                   
½ - 1 cup spicy honey BBQ sauce or any flavor
1 cup brown sugar (or to taste)
Crumbled bacon- cooked
4 cooked chicken breasts (1/2 breasts or use 2 full breasts) or 2  cans of chicken
Shake of Worcestershire sauce to taste
Salt and pepper to taste and any other spices as desired (garlic salt)
Stir in:
1 can of tidbit or chunk pineapple with juice
Add more liquid if needed (1 large family size can of tomatoe soup or puree.)

Great when you're in a hurry. Keep  beans and chicken in storage to have a nutritious soup in an emergency.  Soaking dried beans and season is an option.  Be creative!
