Classic Potato Salad


8 medium potatoes, cooked and diced
1 1/2 cups mayonnaise (or 1 cup mayo and 1/2 cup sour cream)
2 TBS. cider vinegar (I use pickle juice)
2 Tbs. sugar
2-3 tsp.  yellow mustard
1 tsp. salt
1 tsp. garlic powder (optional)
1/2 tsp pepper
2 celery ribs, chopped
1 cup onion, minced
6 or more boiled eggs
dill pickles chopped,
paprika

Boil potatoes in salted water until done.  Cool until room temp.
Peal and dice into a large bowl.
Mix mayonnaise, mustard,vinegar and spices together in another bowl then
add to potatoes.  Stir in celery and onions, then add eggs.
Sprinkle with paprika
