Creamy Poppyseed Coleslaw

1 (16 oz) bag coleslaw  (I use the tri-colored coleslaw mix)
2 (4 oz) pkg. ramen noodles (discard or save season pkt.)  good also w/o noodles
3 apples, chopped
8-10 green onions, chopped
1 1/2 cup cashews
12 oz. Brianna's Poppy Seed dressing or Skinny Girl Dressing ( great w/ homemade recipe below )
Optional ( to make it a meal) I add 1-2 chicken breasts cooked and cut into pieces

Crush ramen noodles in gallon size ziplock bag- Add to coleslaw, apples, onions and cashews.
Mix together with dressing. Cover and refrigerate 1-2 hours

Creamy Poppy Seed Dressing (yield 3 cups)

2/3 c. apple cider vinegar

1 1/2 c sugar
1/2 c chopped onion (I use 3 tsp. dried onion)
1/ tsp dry mustard
1 tsp. salt
3/4 c. mayonnaise
1/4 c. orange juice
3/4 c canola or veg. oil
1 Tbs. poppy seeds

Put all ingred. except oil and poppy seeds in a blender- blending together.
While blending- ADD OIL SLOWLY. when oil is added, blend on high for about 2 minutes.
Turn off and gently stir in poppy seeds.
Serve or cover and refrigerate.
