EZ WHEAT BREAD


           recipe adjustments made by Lynell Vissor,   (Linda Trask's mother) 
                        * this recipe not only tastes great but makes good use of food storage items
                         makes 5 medium size loaves

            5 cups warm water                         
            2 Tbs. yeast
            ½ cup vegetable oil                                 
            ½ cup honey or brown sugar
            1/3 cup wheat gluten         
             ¾ cup potato flakes  (not potato pearls)
            3 Tbs. Dough enhancer  or 3 Tbs. Vinegar
            1/3 cup non fat instant dry milk
            2 Tbs. salt
            10-12 cups whole wheat flour
                       
            Mix ingred. with dough hook for 12-15 minutes.  Punch down and shape into loaves
            using oil on hands and counter while working dough
            Place into greased pans cover and let rise to double in size
            Bake at 350 for 25-30 minutes . Take out of pans  and cool on racks.
     
            * I like to rub tops of loaves with butter to soften
