Fiesta Salad Karen Crandall (Hollie's sister in law)
Delicious Pasta salad with a Fiesta flare
16 oz. Rotini ( twisted pasta)
1 can garbanzo beans/ chick peas
1 can kidney beans
1 can corn
1 red onion - slliced thin
1 red or green pepper- chopped
1 can (or 2) sliced olives
1/4 lb. shredded cheese
Dressing:
2 pkg. Fiesta Ranch Dip (Hidden Valley)
3 cups mayo
3 cups buttermilk
*option to make Fiesta Ranch Dip-
(use 1/2 pkg taco seasoning & 1/2 pkt ranch for each pkt Fiesta Ranch Dip)
stir in dressing and chill 3 hours- best if overnight.
** I use 2 cups mayo and 2 cups buttermilk to make dressing for 12 oz box of pasta
**Before serving- top with 2 diced tomatoes and 2 diced avocados
Serve with a border of tortilla chips
