CAFE RIO PORK- Rice & Dressing


CAFE RIO PORK    Aundrea Esplin
for burritos or salad                                       
2 1/2 lb pork roast- 
seasoned with salt pepper, garlic,
onions- chopped
1 cup or two salsa
taco seasoning
1 can green chilies or equivalent
1 c. brown sugar
cook together in crock pot-  and shred with a fork-add more brown sugar to taste

            *great with Costco’s uncooked flour tortillas

RICE:
3 c water
4 t chicken bouillon
4 t garlic minced
1/2 bunch cilantro
1 can green chilies or equiv. fresh
3/4 t salt
1 T butter
1/2 onion minced
1 1/2 c rice
Blend cilantro, chilies, and onion together in food processer
Bring water to boil and add all ingred. together.
simmer covered for 30 minutes.




TOMATILLO DRESSING
1 env. Hidden Valley Buttermilk Ranch
1 c mayonnaise
1 c  buttermilk
1 c. sour cream    1 c chopped cilantro
3 tomatillos, skinned and chopped
3 cloves- garlic
1/4 tsp. cayenne pepper

Blend and chill to thicken
